Cheesy Baked Corn Dip

WHAT YOU NEED:


  • 3 cups fresh corn kernels from Whidbey Farm & Market

  • 8 oz cream cheese, softened

  • 1/4 cup each: mayonnaise and sour cream

  • 2 cups shredded cheddar cheese

  • 1 can (4 oz) diced green chilies

  • 2 scallions, chopped

  • Juice of 1 lime

  • 1 tsp hot sauce

  • 1/2 tsp each: garlic powder and salt

  • Black pepper to taste


HOW TO MAKE IT


Preheat oven to 375°F. In a large bowl, mix softened cream cheese, mayonnaise, sour cream, lime juice, drained green chilies, hot sauce, garlic powder, and salt until smooth.


Stir in most of the chopped scallions (reserve some for garnish), 1 1/2 cups cheddar cheese, and Whidbey Farm & Market's fresh corn kernels. Season with black pepper to taste.


Transfer mixture to a baking dish. Top with remaining cheddar cheese.


Bake for 20 minutes until bubbly. For a golden top, broil for 2 minutes.


Garnish with reserved scallions. Serve warm with chips or fresh veggies from Whidbey Farm & Market.
